Tuscan Minestrone

What You Need

2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
3 (14.5 ounce) cans chicken or vegetable broth
1 (28-ounce) can crushed tomatoes
1 cup small elbow macaroni, uncooked
1 tablespoon dried basil
1/2 small green cabbage, chopped into 2 inch pieces
3 zucchini, quartered and sliced
1 (15-ounce) can lima or butter beans, drained
Salt and pepper to taste
Shredded or grated Parmesan cheese

Here's How

Heat oil in a large soup pot. Add onions and garlic and cook over medium heat until onions are soft, about 7 minutes. Add broth and crushed tomatoes; bring to a boil. Stir in uncooked macaroni and basil. Simmer 3 minutes, stirring often. Stir in cabbage and zucchini and cook 4 to 5 minutes until pasta is cooked and vegetables are soft. Add beans and salt and pepper to taste. Simmer until heated through. Sprinkle Parmesan cheese on each serving. Makes 6 (2-cup) servings.
