Storm Soup

What You Need

1 cup split peas, dry
4 cups cold water
1 small onion, diced
1 cup cooked ham, chopped
1/2 teaspoon salt, optional
1/2 teaspoon pepper
1 small potato, diced
3 medium carrots, diced

Here's How

In a kettle, combine peas, water, onion, ham (including bone, if applicable, salt, and pepper). Place over high heat and bring to a boil. Cover and cook over medium-low heat for 1 1/2 to two hours, stirring occasionally. Remove ham bone, if used. Add potato and carrots. Continue cooking until potato and carrots are soft. (Thin mixture with water if too thick) Add salt if needed. Makes 8 servings.
