Rainy Day Bean Soup

What You Need

1 pound Great Northern or Navy Beans
1 to 2 ham bones or ham hocks
1 cup onion, chopped
3 stalks celery, diced
1 large carrot, diced
1 tablespoon parsley, chopped
1 teaspoon seasoned salt
1/2 teaspoon celery salt
1 clove garlic, minced
Salt and pepper

Here's How

Wash beans in colander and soak in water to cover overnight; drain. Add 2 1/2 quarts fresh water to a large stock pot. Add ham bones and bring to a boil. Reduce heat and simmer 2 hours. Remove ham bones, trim off meat and return to soup. Discard bones. Add salt and pepper to taste. Add onion, celery, carrot, parsley, seasoned salt, celery salt, and garlic powder. Cover and simmer 1 hour. Add additional water if a thinner consistency is desired. Makes 8 to 10 servings.
