Fiesta Pasta Salad
What You Need
1 (12 ounce) package rotelle pasta, cooked, drained, and cooled
1 cup diced red onion
1 cup diced red pepper
1 (8 ounce) can corn
1 (4 or 7 ounce) can Ortega® Diced Green Chiles
1 to 2 tablespoons Ortega® Diced Jalapenos
1/4 cup chopped cilantro or parsley
1 cup prepared Italian salad dressing
1 tablespoon chili powder
2 teaspoons ground cumin
In large bowl, combine pasta, onion, red pepper, chilies, jalapenos, and cilantro or parsley.
In small bowl, whisk together salad dressing chili powder, and cumin. Pour over pasta mixture, tossing to coat well. Chill at least 30 minutes to blend flavors before serving.
