Blue Cheese Dressing
Blue cheese dressing is so easy to make at home and is much better than what you get in a jar at the supermarket. When you make this Blue Cheese Dressing at home, you can add as much or as little blue cheese as you want. I love blue cheese in the dressing so I usually add a little bit more. If you wish, you can add a little buttermilk to thin it, although I like it just as it is.
What You Need
1 cup mayonnaise
2/3 cup sour cream
2 tablespoons finely chopped onion
1 large clove garlic, minced
1/4 cup finely chopped Italian flat-leafed parsley
1 tablespoon lemon juice
1 tablespoon white vinegar
1/3 cup crumbled blue cheese (I use Gorgonzola)
Freshly ground pepper
Cayenne pepper to taste
Combine mayonnaise, onion, garlic, parsley, sour cream, lemon juice, vinegar, and blue cheese in mixing bowl. Season to taste with salt, pepper, and cayenne. Mix and chill one hour or longer. Makes about 2 cups.
Notes: Only use the packaged crumbled blue cheese if that's all you can get. It's much better to get the chunks and crumble it yourself. You can vary the amount of blue cheese depending on your taste. I love it so I use more like 1/2 cup!
If you like creamy blue cheese, put it in the blender for a few seconds.
