Winter White Bean Soup

What You Need

2 cups chicken or vegetable stock
3 cups water
1 large yellow onion, peeled and cut into 1/2" pieces
1 ham hock or three slices smoked bacon (optional)
3 medium potatoes, peeled and cut into large chunks
2 medium carrots, peeled and cut into 1/2 inch pieces
1 large celery rib, cut into 1/2" pieces
2 15-oz cans Great Northern beans
2 1/2 cups chopped kale or baby spinach
Sea salt and fresh ground black pepper

Here's How

In a large pot, combine stock, water, onion and ham hock or bacon. Over medium high heat, simmer 15 minutes, and then add potatoes, carrots and celery. Cover and cook another 10–15 minutes. Drain beans and stir into soup, let simmer another 5–10 minutes until vegetables are tender. Remove ham hock, cut off the meat and discard the bone. (If using bacon, remove and discard.) Add meat back into soup with chopped greens. Taste and season with salt and pepper. Serves 4
