Twice Baked Sweet Potatoes

What You Need

4 large sweet potatoes or yams
2 tablespoons butter
2 tablespoons orange juice
1 tablespoon maple syrup
1 teaspoon salt
1/2 cup pecans, chopped (optional)

Here's How

Preheat oven to 425 degrees. Scrub potatoes, dry, and prick with tines of fork. Bake 40 to 60 minutes until tender when pricked with a fork. Cut lengthwise slice from top of potatoes. Scoop out flesh, leaving a thin shell. Mash roughly and add butter, orange juice, maple syrup, and salt. Continue mashing until smooth. Place mashed potato mixture in shells. Top with nuts if desired. Bake for the second time for 10 to 15 minutes. Makes 4 servings.

Note: These potatoes can be made in advance and refrigerated, and baked the second time before serving. If yams overbake and skins are too soft to fill, don’t despair. Mash all pulp and serve in a 1 1/2 quart casserole.
