Royal Thai Rice
1 cup Mahatma Jasmine Rice
1 1/2 cups chicken broth
1/4 cup chopped green onions
2 fresh red chilies, seeded and chopped
1 tablespoon chopped cilantro,
1 tablespoon butter
1 teaspoon minced ginger root
1/8 teaspoon tumeric
2 tablespoons lime juice
1/4 cup roasted peanuts
In a medium saucepan, combine Mahatma Jasmine Rice, chicken broth, green onions, chilies, cilantro, butter ginger root, and tumeric. Bring to a gentle boil. Cover. Reduce heat and simmer 15 minutes. Stir in lime juice and peanuts. Serve immediately. Makes 6 servings.
