Roasted Garlic Mashed Potatoes
1 tablespoon olive oil
1 head of garlic
3 baking potatoes, peeled and cubed
1/4 cup milk
2 tablespoons grated Parmesan cheese
2 tablespoons butter
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Preheat oven to 350 degrees F.
Slice off the top of the head of garlic. Place garlic in a small baking dish. Drizzle with olive oil, wrap in foil, and bake 45 minutes, or until golden brown.
Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but firm. Drain, and transfer to a large mixing bowl. Squeeze the garlic out and place roasted garlic, Parmesan cheese, and butter into the bowl with the potatoes. Use a potato masher to beat to desired consistency, adding milk a little at a time. (Use an electric mixer if you think you must!) Season with salt and pepper. Makes 8 servings.
