Roasted Asparagus with Orange and Cumin
What You Need
1 pound asparagus
1 tablespoon olive oil
1 tablespoon thinly sliced strips of orange peel
1/2 teaspoon cumin seeds
Salt and pepper
Rinse asparagus; trim off stem ends. In a 12 by 17-inch baking pan, mix asparagus with olive oil, orange peel, and cumin seeds. Sprinkle generously with salt and pepper.
Bake in a 450-degree oven until asparagus is tender when pierced, 10 to 12 minutes. Arrange on platter. Makes 4 servings.
