What You Need
2 tablespoons butter
1/4 cup orzo pasta or spaghetti broken into small pieces
1 cup water
1 cup long grain rice
1 (14 oz.) can chicken broth
Melt butter; add orzo and cook on low heat until evenly browned, about 2 or 3 minutes. Stir in rice and continue cooking until the grains look clear. Add chicken broth and water; cover and bring to a boil. Reduce heat to low and continue cooking, covered, for 20 minutes or until all the liquid is absorbed. Remove from heat, place two paper towels beneath the lid, and let stand another 15 minutes.
Add a teaspoon of Curry
Substitute 1/4 cup of orange juice for same amount of stock
Substitute 1/4 cup of white wine for same amount of stock
Stir in some toasted, slivered almonds before serving.
