Oven Fried Potatoes

What You Need

2 large russet potatoes
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon dried rosemary
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Here's How

Preheat oven to 400 degrees.

Peel the potatoes and cut into 1/2 inch cubes.  Rinse with cold water and pat dry with paper towels.  Using a pastry brush, coat the bottom of a large baking pan with 1 tablespoon of the olive oil.  Mix remaining 1 tablespoon olive oil with the lemon juice.  Toss potatoes in lemon olive oil mixture to coat.  Spread potatoes in bottom of prepared pan in a single layer.  Sprinkle with rosemary, kosher salt, and black pepper.

Place potatoes in preheated oven for 30 to 35 minutes, stirring about every 10 minutes.  Remove from oven and serve immediately.
