Green Beans Amandine

What You Need

1 pound fresh green beans
1/4 cup almonds
2 tablespoons butter
1/4 teaspoon salt
1 to 2 teaspoons lemon juice

Here's How

Wash beans and snap off ends, leaving beans whole.

Place beans in 1 to 2 inches salted water (1/4 teaspoon salt to 1 cup water). Heat to boiling. Cook uncovered for 5 minutes. Cover and cook until tender (5 to 8 minutes).

While beans are cooking, sauté almonds in butter over medium low heat until golden (2 to 3 minutes), stirring occasionally. Remove from heat; add the salt and lemon juice. Pour over the cooked green beans. Makes 4 servings.
