What You Need
2 15-ounce cans pinto beans, drained and rinsed
3/4 cup beer or water
1/2 cup finely chopped onion
1/2 cup coarsely chopped ham or crumbled, crisp-cooked bacon (4 or 5 slices)
1 4-ounce can diced green chilies
1/3 cup molasses
1/4 cup catsup
1 tablespoon chili powder
In a 1 1/2 quart casserole, combine beans, beer or water, onion, ham or bacon, undrained chili peppers, molasses, catsup, and chili powder. Stir to mix thoroughly. *
Bake, uncovered in 350-degree oven for 1 to 1 1/2 hours or to desired consistency, stirring occasionally. Makes 6 to 8 side dish servings.
*To make ahead: Combine ingredients as directed. Cover and chill until cooking time, up to 24 hours.
