Quick Chunky Tomato Sauce with Basil

What You Need

2 tablespoons olive oil
1/2 cup chopped onion
1 large clove garlic, minced
2 cans (14.5 ounce) diced tomatoes
1 teaspoon dried basil or 1 tablespoon chopped fresh basil
Salt and ground black pepper to taste

Here's How

Heat olive oil in large skillet; stir in onions. Saute over low heat until tender, about 4 minutes. Stir in garlic and saute until fragrant, about 1 minute. Add tomatoes and cook over medium heat, stirring and breaking up tomatoes with the back of a spoon, until boiling. Reduce heat and simmer sauce until slightly thickened, about 15 minutes. Stir in basil, salt, and pepper. Toss with hot pasta. Makes 4 cups.

Notes: A slotted wooden spoon works very well to smash the tomatoes. Freeze this sauce in 2 cup portions for use later.
