Butter Sauce for Salmon
What You Need
Juice of 1 lime
1/2 cup white wine
1 large shallot, chopped, about 2 tablespoons
3 tablespoons whipping cream
1/4 cup (1/2 stick) butter
Bring lime juice, wine, and shallot to a boil and cook until reduced by half, about 5 minutes. Reduce heat to medium. Add cream and whisk to incorporate. Add butter 1 tablespoon at a time, whisking well as butter melts.
Serve over salmon grilled with olive oil, salt, and pepper.
