California Chicken Salad Sandwich

What You Need

3 cups diced, cooked chicken breast
1/2 cup celery, diced
1/4 cup chopped pecans (or walnuts)
1 apple, peeled and diced
1/2 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon onion salt
1/4 cup golden raisins
8 large croissants
Green leaf lettuce

Here's How

Mix the first 8 ingredients. Refrigerate until ready to use.

When ready to assemble the sandwiches, slice the croissants. Add the preferred amount of chicken salad. Top with a leaf of lettuce, if desired. Makes 8 delicious sandwiches.

Variations:

  Replace the raisins with same amount of halved or quartered grapes.
  Replace the nuts with same amount of sliced or coarsely chopped water chestnuts.
  Use your own special bread. Raisin bread, lightly toasted, is wonderful.
  Serve on a leaf of lettuce as a salad instead of a sandwich.
