Penne Pasta Casserole
What You Need
1 pound lean ground beef
1 large onion, chopped
1 can (14.5 oz.) Hunts Diced Tomatoes with Basil, Garlic, and Oregano
1 can (6 oz.) Hunts Tomato Paste
1/2 cup water
12 ounces (about 3 1/2 cups) uncooked penne pasta, prepare according to package directions
3 cups (12 ounces) shredded mozzarella cheese, divided
PAM No-stick Cooking Spray
Cook beef and onion in large skillet until beef is crumbled and no longer pink. Drain. Stir in diced tomatoes, tomato paste, and 1/2 cup water. Season to taste. Heat through.
Coat a 13x9x2-inch baking dish with PAM No-stick Cooking Spray. Combine cooked pasta with meat-tomato mixture and 2 cups mozzarella cheese. Pour in baking dish and top with remaining cheese.
Bake uncovered in a preheated 350 degree oven for 20 to 25 minutes or until heated through and cheese is melted. Makes 6 to 8 servings.
