Penne All'Arrabbiata

What You Need

1 pound Penne
1/2 cup diced bacon
1/4 cup olive oil
2 cloves garlic, minced
1/2 to 1 1/2 teaspoons crushed red pepper
1 can (28 ounce) Italian plum tomatoes with juice
2 tablespoons chopped parsley
Salt

Here's How

In a skillet, sauté the garlic in olive oil until golden; remove and discard. Add the diced bacon and let brown for a few minutes. Puree the tomatoes in a food mill or blender and add, with the red pepper, to the skillet. Simmer, stirring, until the sauce is slightly reduced and thickened, about 20 minutes. Season with salt to taste. In the meantime, cook the Penne according to package directions until al dente. Drain, add the sauce, and toss. Sprinkle with parsley. Serves 4 to 6.
