Salmon with Fresh Pineapple Salsa
What You Need
1 cup plus 1 1/2 tablespoons Lawry’s Teriyaki marinade with pineapple juice, divided
1 1/4 pounds fresh salmon fillets or steaks
1 cup chopped fresh or canned pineapple, drained
1/4 cup finely chopped red onion
2 tablespoons chopped red bell pepper
1 tablespoon chopped fresh cilantro
1 tablespoon minced fresh jalapeno pepper
Combine one cup marinade and salmon in a resealable plastic food storage bag; seal bag. Marinate in refrigerator at least 30 minutes. Combine pineapple, onion, bell pepper, additional marinade, cilantro, and jalapeno in small bowl. Let stand at room temperature 30 minutes to allow flavors to blend.
Remove salmon; discard used marinade. Grill or broil salmon 10 to 12 minutes or until fish flakes easily when tested with fork, turning halfway through grilling time. Top with pineapple salsa.
