Baked Parmesan Orange Roughy
1/3 cup grated Parmesan cheese
2 tablespoons all-purpose flour
1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon pepper
1 egg
2 tablespoons milk
4 orange roughy fillets, 4 ounces each
In a shallow bowl, combine Parmesan, flour, paprika, salt, and pepper. In another bowl, beat the egg with the milk. Dip fish fillets in egg mixture, then coat with Parmesan mixture. Arrange in a 13x9x2-inch baking dish. Bake uncovered at 350 degrees for 25-30 minutes, or until fish flakes easily with a fork. Makes 4 servings.
