Surprisin’ Carrot Cake

What You Need

2 cups unsifted flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
3 eggs
1 1/2 cups sugar
3/4 cup BEST FOODS mayonnaise
1 can (8 ounce) crushed pineapple in own juice, undrained
2 cups coarsely shredded carrots
3/4 cup coarsely chopped walnuts

Here's How

Grease and flour 2 9-inch round baking pans. In a bowl, stir together first 5 ingredients; set aside. In a large bowl with mixer at medium speed, beat next 4 ingredients until well blended. Gradually beat in flour mixture until well mixed. With spoon, stir in carrots and walnuts. Turn into prepared pans. Bake in 350 degree oven for 30 to 35 minutes or until cake tester inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and cool completely on rack. Frost with cream cheese frosting. (Recipe follows.)

Cream Cheese Frosting

1 8-ounce package cream cheese, softened
1 stick butter
1 1/2 cups powdered sugar
1 teaspoon vanilla

Mix cream cheese and butter until well blended. Add powdered sugar and vanilla.
