Bananas Foster

What You Need

2 bananas, ripe but firm
3 tablespoons butter
1/4 cup brown sugar, packed
1/8 teaspoon nutmeg or cinnamon
1 tablespoon banana liqueur
1 ounce brandy
Vanilla ice cream

Here's How

Melt butter in a heavy saucepan and add the sugar. Cook, stirring, over medium heat until caramelized. Peel and quarter the bananas, first cutting each one crosswise at the center and then each half lengthwise. Add to the caramel sauce and sauté gently until the banana is soft. Stir in the nutmeg or cinnamon and the liqueur. Pour brandy on top but do not stir. Light the brandy with a match and quickly spoon flaming mixture over ice cream.
