Apple Walnut Cobbler
What You Need
A cross between a coffee cake and a pudding, this dessert cuts nicely into squares. Or, spoon portions into dessert cups and pass the cream
5 cups thinly sliced, peeled tart apples (such as Granny Smith, Jonathan, or Rome)
3/4 cup chopped walnuts
1/4 cup sugar
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 beaten egg
1/2 cup evaporated milk
1/3 cup margarine or butter, melted
Half-and-half or light cream, optional
Spread the apples in a lightly greased 2-quart baking dish. Sprinkle with 1/2 cup of the walnuts, the 1/4 cup sugar, and the cinnamon. In a medium mixing bowl, stir together the flour, the 1/2 cup sugar, and the baking powder.
In a small bowl, combine the egg, evaporated milk, and the melted butter or margarine. Stir the egg mixture into the dry ingredients until smooth. Pour evenly over the apples; sprinkle with remaining walnuts.
Bake in 325 degree oven for 50 to 55 minutes or until a toothpick inserted in the middle comes out clean. Serve cobbler warm, cut into squares. If desired, serve with half-and-half or light cream. Makes 9 servings.
