Curry Chicken Delight

What You Need

4 whole chicken breasts, skinned, halved lengthwise, and boned.
1/4 cup flour
4 slices bacon
1/4 cup honey
2 tablespoons prepared mustard
1/2 teaspoon salt
1/2 teaspoon curry powder
Hot cooked long grained and wild rice or hot cooked rice

Here's How

Rinse chicken. Pat dry with paper toweling. Coat chicken pieces with flour. In a skillet, cook bacon until crisp. Drain bacon on paper toweling; drain and set aside. Reserve drippings. Add chicken to skillet; slowly brown chicken on all sides in hot drippings about 10 minutes. Transfer chicken to 8 x8 x2 inch baking dish. Bake chicken, uncovered, in 350 degree oven for thirty minutes. Combine honey, mustard, salt, and curry powder; drizzle over chicken in baking dish.  Bake, uncovered, 15 minutes more.  Top with crumbled bacon. Serve with hot cooked rice. Makes 8 servings.
