Chicken with Peach Salsa
What You Need
2 fresh peaches (1 cup), chopped
1 teaspoon sugar
2 tablespoons sliced green onions
2 tablespoons chopped fresh cilantro
2 tablespoons finely chopped Serrano pepper
4 (4 ounces each) boneless skinless chicken breasts
Salt and pepper
Stir together all salsa ingredients in small bowl. Cover; refrigerate at least 30 minutes.
Rub chicken breasts with olive oil. Sprinkle with salt and pepper. Grill chicken breasts over medium heat, turning once, until chicken is no longer pink (10 to 15 minutes). Serve chicken with salsa. Makes 4 servings.
