Chicken Tacos

What You Need

1 pound boneless skinless chicken breasts
1 tablespoon canola oil
2 or 3 tablespoons Ortega Fire Roasted Diced Green Chiles (or use the whole can)
Chicken taco seasoning mix (recipe follows)

Here’s How

Cut the chicken breasts into thirds lengthwise, then cut each third into bite-size slices. In a large non-stick skillet,add the canola oil and heat a bit. Add the chicken and cook a couple of minutes. Add the diced green chiles and a little water. Continue to cook until the chicken is done. Add the spice mixture and simmer 4 or 5 minutes. Add more water if necessary. Serve in taco shells with your favorite condiments. (lettuce, tomatoes, grated cheese, sour cream, or whatever you like on your tacos)

Note: If you don’t have diced green chiles, use about 1/2 teaspoon crushed red pepper.

Chicken Taco Seasoning

What You Need

1 teaspoon chili powder
1/2 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
Pinch of oregano
1/2 teaspoon salt

Here’s How

Mix all ingredients in a small bowl. Use as much or as little as you want in the recipe. Save the rest for another time.

Additional notes: Chicken is easier to slice if partially frozen. Use more or less of the spice to suit your taste. Save what’s left for another time.
