Chicken Nuggets

4 boneless, skinless chicken breast filets
1/2 cup unseasoned dry bread crumbs
1/4 cup grated Parmesan cheese
1 tsp. salt
1 tsp. dried leaf thyme (or 1/4 tsp. powdered thyme)
1 tsp. dried leaf basil
1/4 cup butter or margarine, melted


Wash chicken and pat dry. For nuggets, cut each filet into 6 to 8 pieces about 1 1/2 inches square. (Nuggets make nice hors dÆoeuvres; for a meal main dish, do not cut filets.) Combine remaining ingredients except butter in a flat bottom bowl or pan. Dip nuggets or filets in butter, then in crumb mixture. Place in single layer on foil lined baking sheet. Bake immediately at 375 degrees for 30 minutes for nuggets or 40 minutes for filets or until golden brown on both sides. Turn carefully with spatula after half of baking time. Makes 32 hors d'oeuvres or 4 main servings.
