Cajun Style Chicken Breasts

What You Need

1 tablespoon butter
1 tablespoon olive oil
2 pounds boneless, skinless chicken breasts
1 large onion, chopped
2 green bell peppers, seeded and chopped
2 cups tomato juice
1/4 teaspoon each: cayenne pepper, dried thyme, garlic
flakes, ground cloves, and allspice

Here's How

Melt butter in olive oil in heavy, non-stick skillet. Add chicken. Brown quickly on both sides. Remove to platter. Add onion and bell pepper. Cook until soft. Add juice and seasonings. Return chicken to pan. Simmer, uncovered,
until sauce is thick. Makes 8 low calorie servings.
