Cajun Style Chicken Breasts
2 teaspoons margarine
2 pounds boned, skinned chicken breasts
1 large onion, chopped
2 green bell peppers, seeded and chopped
2 cups tomato juice
1/4 teaspoon each: cayenne pepper, dried thyme, garlic flakes, ground cloves, and Allspice.
Melt margarine in heavy, non-stick skillet. Add chicken. Brown quickly on both sides. Remove to platter. Add onion and bell pepper. Cook until soft. Add juice and seasonings. Return chicken to pan. Simmer, uncovered, until sauce is thick. Makes 8 low calorie servings
