German Pancake

This oven pancake puffs up and falls. It is served with a squeeze of lemon juice and powdered sugar. Prep time approximately 5 minutes. Cook time approximately 15 minutes.

1/4 cup and 1 tablespoon butter
4 eggs
1/4 teaspoon salt
1 cup all-purpose flour
1 cup milk  
1 tablespoon lemon juice
2 tablespoons confectioners’ sugar

Preheat oven to 425 degrees F

In a mixing bowl, combine the eggs, flour, salt, and milk. Melt the butter in a 9x13 inch-baking pan. Pour the contents of the mixing bowl into the pan.

Bake for 15 to 20 minutes until the mixture rises. Serve at once. Sprinkle powdered sugar and lemon juice on top at the table. Makes 4 servings.

Note: For 2 servings, you can cut the ingredients in half and use an 8x8 inch-baking pan.
