Banana Nut Pancakes

What You Need

1 egg
1 cup plus 1 tablespoon buttermilk
2 tablespoons vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 medium, ripe banana, mashed with a fork
1/4 cup chopped pecans

Here's How

Beat egg; add remaining ingredients in the order listed. Beat until smooth. Grease heated griddle, if necessary. To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right. Pour batter from tip of a large spoon or a pitcher onto hot griddle. Turn pancakes as soon as they are full of bubbles but before they break, about 2 minutes. Bake other side until golden brown, about 1 1/2 minutes. Makes about 10 4-inch pancakes.
