Pineapple Banana Nut Bread

What You Need

1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup white sugar
1/2 teaspoon ground cinnamon
1/2 cup chopped macadamia nuts (or walnuts)
2 eggs, beaten
1/2 cup vegetable oil
2 very ripe bananas, mashed
1 (8 ounce) can crushed pineapple, drained
1 teaspoon vanilla extract
1/2 cup flaked coconut

Here's How

Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan.

In a large mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon. Add the nuts, eggs, oil, banana, pineapple, vanilla, and coconut; stir just until blended. Pour batter evenly into the prepared pan.

Bake at 350 degrees for 60 minutes, or until a tooth pick inserted into the center of the loaf comes out clean. Cool in the pan for 10 minutes, and then remove to a wire rack to cool completely.
