Apple, Raisin & Cinnamon Muffins
What You Need
3/4 cup cooking oil
1 cup sugar
1 1/2 cup all purpose flour
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 cup apple juice
1 apple, peeled, cored, and grated
1/2 cup raisins
Preheat oven to 350 degrees Fahrenheit.
Grease and flour muffin pan.
In a large bowl, whisk together oil, sugar and eggs until they are thoroughly mixed.
Sift flour, cinnamon, salt and baking soda into mixture and combine. Stir in apple juice, apple and raisins. Mixture should be fairly runny.
Pour into muffin pan and bake at 350 degrees Fahrenheit for 15-20 minutes. Cooked muffins should spring up in the center when touched with a fingertip.
Turn out onto a cooling rack and serve warm with butter if desired. Makes 12 muffins.
