Grilled Skirt Steak 


What You Need

1 skirt steak (1 1/2 - 2 pounds)*
3 tablespoons olive oil
3 tablespoons fresh lime juice
2 tablespoons brown sugar
1/2 teaspoon crushed red pepper flakes
2 cloves garlic, minced

Here's How

Trim off as much fat as possible from both sides of skirt steak. Trim off as much of the silverskin as you can.

Mix together olive oil, lime juice, brown sugar, crushed red pepper, and garlic. Place steak in a nonreactive dish or a large resealable bag. Add the marinade and marinate 15 to 30 minutes, turning occasionally.

Preheat grill to hot. Remove steak from marinade and season with salt and pepper. Place steak on grill, then cover, and cook until seared, 3 to 4 minutes. Turn the steak and cook another 2 to 3 minutes. Transfer meat to a cutting board, tent with foil, and let steak rest 5–8 minutes before slicing. Makes 4-6 servings.

*Flank steak may be substituted.
