Feta Stuffed Mushrooms

What You Need

15 large fresh white mushrooms
1/4 cup butter
3 tablespoons chopped green onions
1 tablespoon flour
1/4 cup milk
3 tablespoons crumbled feta cheese
3 tablespoons finely chopped parsley
1 clove garlic, minced
2 tablespoons butter
1/4 cup grated Parmesan cheese
Salt and pepper to taste

Here's How

Clean mushrooms and remove stems; set stems aside. Brush caps with 1/4 cup melted butter; arrange hollow side up in 9 x 13 baking dish. Sprinkle with salt and freshly ground pepper. Mince reserved mushroom stems. Melt 2 tablespoons butter in a small frying pan. Add minced stems and chopped onions and sauté until the liquid has been absorbed. To the pan, add the flour and mix well; add the milk. This will thicken the mixture. Add parsley, garlic, salt, and pepper to taste. Mix well. Add the feta cheese and stir until it just starts to soften. Fill mushroom caps with mixture. Top with Parmesan and a few dots of butter. Bake at 375 degrees for 15 to 20 minutes or until top has browned lightly and cheese has melted.
